Evde Lüks Restoran Yemeği! 🍄 Arpa Şehriyeden Trüf Mantarlı Risotto Tarifi

Mis gibi kokusuyla, az malzemeyle kocaman etki yaratanlardan🍄

Biliyoruz, trüf mantarı çok pahalı bir malzeme. Ama gastronomik olarak da bilmek, tadını tanımak gereken özel şeylerden biri. Hazır arkadaşım da hediye göndermişken deneyip, sizinle de paylaşalım istedik.

Yarım soğan
8-10 adet mantar, 200 g
3 diş sarımsak
Yarım su bardağından biraz fazla arpa şehriye, 125 g
3 çorba kaşığı zeytinyağı
1 tatlı kaşığı kuz
1 silme tatlı kaşığı karabiber
Yaklaşık 3 su bardağı et suyu, 800 ml
40 g İzmir tulumu veya parmesan
3-4 dal frenk soğanı
2-3 dal taze kekik
2 çorba kaşığı trüf yağı

Üzerine;
Karabiber
Taze kekik
Frenk soğanı
3-4 dilim trüf mantarı, tercihe göre

• Küçük bir tencereye yaklaşık 3 su bardağı et suyunu koyup kısık ateşte ısıtmaya başlayın.
• Geniş bir tavaya 3 çorba kaşığı zeytinyağı ekleyin. Yağ ısınınca piyazlık doğradığınız yarım soğanı ekleyin ve güzelce renk alana kadar kavurun.
• Ardından iri parçalar halinde doğradığınız mantarları ekleyip üzerine bir tutam tuz serpin.
• Tavadaki tüm malzemeler karamelize olunca 3 diş ezilmiş sarımsak ve yarım su bardağından biraz fazla arpa şehriyeyi ekleyin.
• Tencereye birer tutam tuz ve karabiber ekleyip kavurmaya devam edin.
• Ardından kepçe ile kenarda ısınan et suyundan azar azar tavaya ekleyin. Sürekli aynı yönde karıştırarak pişirmeye devam edin.
• Tüm et suyu bitip şehriyeler pişene kadar pişirmeye devam edin. Şehriyeler suyu çekip şişince üzerine 40 g İzmir tulumu veya parmesan rendeleyin. İnce kılmış 3-4 dal frenk soğanı, 2-3 dal taze kekik ve 2 çorba kaşığı trüf yağı ekleyip karıştırın.
• Şehriye risottoyu servis tabağına alın. Üzerine biraz karabiber, taze kekik, frenk soğanı ve 3-4 dilim trüf mantarını ekleyince lezzetine doyamayacağınız trüflü şehriye risotto emrinize amade!
