Leonor Lavado junto a Joseba Arguiñano prepara un Arroz CASERO de conejo con alioli
¿Quieres recuperar el sabor de los arroces de toda la vida?
Joseba Arguiñano cocina junto a Leonor Lavado un arroz con carne de conejo y alioli, una receta tradicional llena de sabor.
El secreto está en un majado con hígado, riñones, almendras y pan que aporta una profundidad increíble al caldo. ¡Y acompañado de un alioli suave y cremoso! Perfecto para compartir en familia.
🍚 INGREDIENTES (para 2 personas):
200g de arroz bomba
1/2 conejo troceado
4 chalotas, 1/2 pimiento rojo, 1/2 pimiento verde, 1 tomate, 2 dientes de ajo
50ml de vino blanco
1/2 litro de caldo de carne
Aceite de oliva, sal, pimienta y perejil
Para el majado:
1 diente de ajo, 1 rebanada de pan, 6-8 almendras crudas, riñones e hígado de conejo
Para el alioli:
8 dientes de ajo, aceite de oliva virgen extra y sal
👨🍳 PASO A PASO (trucos en el vídeo):
1. Alioli suave: Hierve los ajos pelados durante 5 minutos, escúrrelos y machácalos en el mortero con sal. Añade aceite poco a poco hasta obtener una pasta cremosa. Reserva.
2. Majado de sabor: En una tartera con aceite, fríe el hígado y los riñones troceados junto con las almendras, el ajo y el pan. Cuando estén dorados, machácalo todo en el mortero hasta obtener una pasta espesa. Reserva.
3. Sofrito: Salpimienta el conejo y dóralo en la misma tartera. Añade las chalotas, los pimientos y los ajos picados. Sofríe 8-10 minutos. Incorpora el tomate rallado y cocina 2-3 minutos. Vierte el vino blanco y deja evaporar el alcohol.
4. Arroz: Añade el arroz y rehógalo un poco. Incorpora el majado, mezcla bien y vierte el caldo.
5. Cocción 5-5-5-5: Cocina 5 minutos a fuego fuerte, 5 a fuego suave y 5 a fuego fuerte. Retira, tapa con un paño y deja reposar 5 minutos más.
6. Servir: Sirve el arroz con el conejo y acompaña con el alioli. Decora con perejil..
