Mother of soldier killed at CFB Wainwright says he wanted to protect Canada
Sonia Monk says her son, Pte. Aidan Goulding, 23, joined the army because he wanted to protect his country. Goulding was one of four soldiers who died Saturday after a grass fire swept through Canadian Forces Base Wainwright.

Paula Leitón y Joseba Arguiñano preparan Bonito CARAMELIZADO con cebolla pochada
Paula Leitón, campeona olímpica se une a Joseba Arguiñano para preparar bonito con compota de cebolla.
INGREDIENTES:
- Para el bonito:
2 medallones de bonito
4 cebolletas
8-10 nueces
Aceite de oliva virgen extra, sal Maldon y perejil
- Para la vinagreta:
2 tomates
50g de guindilla de Ibarra en conserva
1 trufa negra pequeña
2 dientes de ajo
3 chalotas
100ml de jugo de trufa
45ml de vinagre de Jerez
Aceite de oliva, sal y perejil
👨🍳 PASO A PASO:
1.Compota de cebolla: Calienta aceite y pocha las cebolletas en juliana fina a fuego suave con sal durante mínimo 35 minutos hasta que queden como mermelada. Añade las nueces picadas y cocina un poco más.
2.Vinagreta: Pica el tomate en brunoise. Abre las guindillas, quita las semillas y pica finamente. Pica el ajo y las chalotas. Corta la trufa en rodajitas. Mezcla todo con el jugo de trufa y el vinagre. Sazona y emulsiona con aceite poco a poco. Añade perejil.
3.Marca el bonito: Calienta aceite en una sartén. Cocina los lomos de bonito solo por un lado hasta que se doren. Deja el otro lado rosa. Calienta también la compota en la sartén.
4.Servir: Reparte la compota en los platos, coloca el bonito con el lado rosa hacia arriba. Condimenta con flor de sal y baña con la vinagreta. Decora con perejil.
