Joseba Arguiñano y Vanesa Romero cocinan BONITO AL PAPILLOTE
¿Quieres cocinar pescado de forma saludable, jugosa y sin complicaciones?
Joseba Arguiñano y Vanesa Romero te enseñan a preparar bonito al papillote, una técnica francesa que consiste en cocinar el pescado en su propio vapor dentro de un paquete de papel.
¡Una receta fácil, saludable y con un resultado espectacular!
🐟 INGREDIENTES (2 personas):
-Para el papillote:
400g de bonito del norte (lomo)
1/2 limón (ralladura)
50g de espinacas
10 vainas (judías verdes)
Aceite de oliva, sal, perejil y romero
-Para la vinagreta de tomate e ibérico:
2 tomates rama
1 diente de ajo
2 lonchas de jamón ibérico
1 cucharada de vinagre de sidra
150ml de aceite de oliva
Sal y pimienta blanca
👨🍳 PASO A PASO (trucos en el vídeo):
Vinagreta: Escalda los tomates, pélalos y retira las semillas (reserva el "caviar"). Corta la pulpa en daditos y mezcla con vinagre, aceite, sal y pimienta. Sofríe el ajo y el jamón picado 30 segundos y añade a la vinagreta.
Monta el papillote: Corta el bonito en 4 trozos. Lava las espinacas y las vainas (corta estas últimas finamente). En dos trozos de papel de horno, reparte las espinacas y las vainas, coloca 2 lomos de bonito, salpimienta y añade ralladura de limón. Cierra bien el paquete con pliegues o clips.
Hornea: Coloca los papillotes en una bandeja y hornea a 200ºC durante 8 minutos (el centro debe quedar rosado).
Servir: Abre el papillote, aliña con la vinagreta, corona con el caviar de tomate y decora con perejil y romero.
