🥟 Empanada gallega, la receta tradicional de Joseba Arguiñano.
La empanada gallega es uno de los grandes clásicos de nuestra gastronomía y Joseba Arguiñano nos enseña a prepararla desde la masa, con un tradicional relleno de bonito, cebolla, pimientos y tomate.
En esta receta, el sofrito se prepara con cebolla y pimientos de Lidl y su aceite se reserva para elaborar una masa llena de sabor.
📝 Ingredientes para 6 raciones:
* 780 g de harina de fuerza
* 180 ml de aceite de oliva virgen extra
* 200 ml de agua
* 14 g de sal
* 21 g de levadura fresca de panadero
* 180 ml de aceite de oliva
* 600 g de cebolla
* 1 pimiento rojo
* 1 pimiento verde
* 300 g de bonito del norte en conserva
* 250 g de salsa de tomate
* 1 huevo
* 15 ml de leche
👨🍳 La clave:dejar fermentar la masa aproximadamente una hora y utilizar el relleno completamente frío antes de montar la empanada. Después, solo queda hornear a **180 ºC durante unos 45 minutos**.
