Pochas con bacalao y huevo escalfado de Joseba Arguiñano y Peldanyos
Hoy, Joseba Arguiñano junto a Peldanyos, han preparado unas pochas con bacalao y huevo escalfado. 🔥
📝 Ingredientes
• 200 g de pochas
• 300 g de bacalao con piel
• 2 huevos
• 1 cebolleta
• 1 tomate
• 1 pimiento verde
• 6 dientes de ajo
• 1 cucharadita de vinagre
• Aceite de oliva virgen extra
• Sal
• Perejil
👨🍳 Elaboración paso a paso:
1️⃣ Cuece las pochas: pon en una cazuela la cebolleta, el tomate, el pimiento, 4 dientes de ajo y las pochas. Cubre con agua, tapa y cocina a fuego suave 35-40 minutos, retirando la espuma.
2️⃣ Da cuerpo al caldo: tritura las verduras con un poco de caldo y vuelve a incorporarlas a las pochas. Sazona.
3️⃣ Confita el bacalao: sofríe los 2 ajos restantes laminados hasta que estén crujientes. Retíralos y confita el bacalao en el mismo aceite, con la piel hacia abajo. Retira la piel y separa las lascas.
4️⃣ Liga el pilpil: deja templar el aceite y ve incorporándolo poco a poco a los jugos del bacalao mientras ligas la salsa con un colador.
5️⃣ Integra el bacalao: añade las lascas al pilpil y calienta suavemente para que se mezclen los sabores.
6️⃣ Escalfa los huevos: cocina los huevos en agua muy caliente, pero sin que llegue a hervir, durante 3-4 minutos.
7️⃣ Emplata: sirve las pochas en un plato hondo, coloca encima el bacalao y el huevo, moja con el pilpil y termina con los ajos crujientes y perejil.
💡 Consejo: Para que el pilpil ligue fácilmente, deja que la sartén se temple y añade el aceite poco a poco. Y con las pochas, nada de remover con cuchara: agita suavemente la cazuela para no romperlas.
