Tosta de bacalao con hortalizas asadas, una receta de Joseba Arguiñano y Pablo Lopez
¿Quieres convertir una simple tosta en un plato completo, nutritivo y con un toque especial?
Joseba Arguiñano y Pablo López te enseñan a preparar una tosta de bacalao con hortalizas asadas, una receta fácil que combina pan de hogaza, pimientos asados, cebolleta, queso de tetilla y bacalao marinado con lima.
El toque especial lo da un falso pilpil elaborado con la piel del bacalao, que aporta cremosidad sin complicaciones.
¡Una tosta de 10!
🥖 INGREDIENTES (2 personas):
2 rebanadas de pan de hogaza
400g de bacalao desalado
4 lonchas de queso de tetilla
2 pimientos rojos
1 cebolleta
5 dientes de ajo
2 limas
Aceite de oliva, sal y perejil
👨🍳 PASO A PASO (trucos en el vídeo):
Asa las verduras: Hornea los pimientos y la cebolleta a 190ºC durante 30 minutos. Pela, despepita y corta en tiras. Mezcla.
Marina el bacalao: Retira la piel del bacalao (resérvala). Corta en tiras y marina con ralladura y zumo de lima, aceite y sal durante 25 minutos.
Crujiente de ajo y perejil: Fríe los ajos laminados hasta que estén dorados y crujientes. Retira. Fríe el perejil brevemente.
Falso pilpil: En la misma sartén, cocina las pieles del bacalao 10 minutos. Retira las pieles, tritura el aceite hasta emulsionar.
Tuesta el pan: Tuesta el pan en una sartén, pinta con el jugo del marinado, dale la vuelta, coloca el queso de tetilla y tapa hasta que se funda.
Montaje: Coloca las hortalizas sobre el pan, el bacalao marinado, moja con el pilpil y espolvorea con el crujiente de ajo y perejil.
