¿Pasta siempre igual?

Joseba Arguiñano y Eva Soriano te enseñan una receta fácil y diferente: Penne rigate con chipotle y ricotta. Una combinación sorprendente donde la cremosidad del queso se encuentra con el sabor ahumado y ligeramente picante del chipotle.

El resultado: un plato con una salsa de tomate espectacular y una presentación de diez gracias al jamón ibérico crujiente.

🍴 INGREDIENTES (para 2 personas):

200g de pasta penne rigate
1 chile chipotle
100g de queso ricotta
2 tomates grandes
1 cebolla morada y 2 dientes de ajo
4 lonchas de jamón ibérico
60ml de vodka
Queso parmesano, albahaca fresca, perejil y aceite de oliva

👨‍🍳 PASO A PASO (mira el vídeo para los trucos):

1.Salsa: Sofríe cebolla y ajo, añade el chipotle, flambea con vodka y agrega el tomate. Cocina 30 minutos.
2.Cremosa: Tritura la salsa con la ricotta hasta obtener una textura sedosa.
3.Jamón crujiente: Deshidrata las lonchas de jamón en sartén sin aceite (4 min por lado).
4.Majado de hierbas: Machaca perejil y albahaca con aceite en un mortero.
5.Pasta: Cuece los penne 2 minutos menos de lo indicado, termina la cocción en la salsa.
6.Presentación: Sirve con parmesano, el majado de hierbas y las lonchas de jamón crujiente.

Controla el chipotle al gusto: es ahumado y picante. Empieza con poca cantidad.
