Brocheta de pato y setas con higos y avellanas, receta de Joseba Arguiñano y Martín Ibarrola

🦆 Hoy preparo unas brochetas de pato y setas con higos y avellanas, una combinación diferente en la que mezclo el sabor intenso del pato con el toque terroso de las setas y la dulzura de los higos.

📝 Ingredientes (2 personas):

8 solomillos de pato
2 setas de cardo
8-10 chalotas
4 higos
50 g de avellanas
1 diente de ajo
1 limón
2 cucharadas de vinagre de Jerez
2 cucharadas de moscatel
Aceite de oliva virgen extra
Sal y pimienta
Perejil

👨‍🍳 Elaboración paso a paso:

1️⃣ Pocho las chalotas picadas con aceite y sal durante unos 20 minutos. Añado las avellanas picadas y los higos en cuartos. Incorporo el vinagre de Jerez y el moscatel, y dejo reducir hasta conseguir una guarnición melosa.

2️⃣ Majo el ajo con sal y perejil. Agrego la ralladura y el zumo de limón, y lo ligo todo con un chorrito de aceite.

3️⃣ Salpimiento los solomillos de pato y corto las setas en cuatro trozos. Monto las brochetas con dos palillos paralelos, alternando la carne y las setas.

4️⃣ Cocino las brochetas en una plancha caliente con aceite durante 4-5 minutos por un lado. Les doy la vuelta, las unto con el majado y cocino 5 minutos más. Vuelvo a girarlas, añado más majado y las retiro enseguida.

5️⃣Sirvo las brochetas acompañadas de la guarnición de higos y avellanas, y termino con un poco de perejil.

💡 Mi consejo: utilizo dos palillos paralelos para montar cada brocheta. Así evito que la carne y las setas giren al darles la vuelta. Además, cocino el pato con la plancha bien caliente para dorar la superficie y conseguir un resultado más sabroso.

Uswah is a cheerful, intelligent, and ambitious young woman from a middle-class family who works part time to support her education and help her family.
